After I cooked it and went to cut it, the center had the red spot you see on a real turkey that has been cut too close to the bone. It also had that later of flesh close to the bone. So, cutting all the red spot out down the center and getting rid of gristle and what ever wasn't turkey meat, we wound up with about a pound of turkey.
