Food in hand luggage

Hi, I got into a parade of mayonnaise deprivation going through control! I fly from Melbourne to another country practically every month and every time I take a couple of packs of Australian Francis mayonnaise in a soft pack, it was always Ok I was not deprived or reprimanded for having mayonnaise in my hand luggage but this time for some reason I was deprived, I explained that I I've always taken it with me but why shouldn't I take it to another country this time!? Probably the airport rules change every day!?
