When I first saw and purchased Marketside Blue, it was fantastic. I purchased the Crumbles and it was speckled through and through with blue. Melted in my mouth. Then I saw the 5 oz wedges later ... speckled to the rind rim. Now, the last year, the wedges are a poor purchase. The outside of the cheese wedge to about halfway into the wedge is solid white. The inside toward the core of cheese is absolutely wonderful. So, you are losing half, maybe more of True Blue. Think I'll go back to Treasure Cave blue cheese. I cannot complain about the price... if it were all consistent. I will take this up with Wal Mart. Hope this helps. Half the blue means half of 5 stars.
